Ayvalık tostu
Origin: Ayvalık, Aegean
Toasted half-moon bun from Ayvalık filled with beef sucuk and kaşar or tulum cheese, finished with chopped tomato and served hot.
Ayvalık tostu is a toasted sandwich made with a special bun. The dough is wheat flour, chickpea yeast, sourdough, salt and water. Each bun weighs 75–80 g and is shaped by hand into a half-moon 18–20 cm long. The bun is cut in half and spread with margarine on the outside. It is filled with at least 70 g of beef sucuk and 70 g of kaşar or tulum cheese. It is pressed for five minutes in a cast-iron toaster heated to 220 °C. Finely chopped tomato goes in after toasting. Salami or sausage may be added on request.
Ayvalık Municipality registered the name as a traditional product name in January 2023. The toast was first made in Ayvalık, Balıkesir, and is now sold across Türkiye. In summer, queues form at the town's toast kiosks.
Dietary notes: beef sucuk, cow's milk cheese (dairy), wheat (gluten) and margarine. Ask about the ingredients of any extras.
