Maraş dondurması
Origin: Kahramanmaraş, Mediterranean
Firm, slow-melting Kahramanmaraş ice cream made only from goat's milk, wild-orchid salep and sugar, beaten and served in slices.
Maraş dondurması is a firm, white ice cream made only from goat's milk, salep and sugar. Salep is a flour ground from the tubers of wild orchids. Its glucomannan makes the ice cream dense and elastic and slows melting. Under the registered method, fresh goat's milk is thickened, sweetened and boiled again, then salep is stirred in for three to five minutes. The cooled mix is worked in freezing machines at −5 to −8 °C. In ice cream shops it is beaten with long metal paddles and cut into slices, sometimes eaten with a knife and fork.
The Kahramanmaraş Chamber of Commerce and Industry registered the name as a geographical indication in 2018. The milk must come from goats raised in Kahramanmaraş province, which graze on thyme, astragalus and crocus. Locals eat it all year, not only in summer.
Dietary notes: goat's milk (dairy, lactose) and sugar. The registered recipe uses no eggs and no cream.
