Kebab
İskender kebab
Origin: Bursa, Marmara
Thin slices of döner over cut pide, topped with tomato sauce and hot butter, with yoghurt on the side.
İskender is döner meat sliced thin and laid over cut pide bread. The meat is usually lamb; some restaurants also offer chicken. The döner cooks slowly close to the fire and is cut from top to bottom with a knife. The pide is warmed on the grill and cut onto a hot plate. Tomato sauce and the meat go on top. Melted butter is poured over last, often at the table, and yoghurt is served on the side.
The dish comes from Bursa. According to the Bursa culture and tourism directorate, İskender Efendi began serving it in 1867 at his shop in the Kayhan bazaar. It is also called Bursa kebab or yoghurt kebab. Kebapçı İskender is now on Atatürk Caddesi, next to the Tayyare Cultural Centre in Osmangazi.
Dietary notes: contains lamb, butter and yoghurt. The pide is made from wheat and contains gluten.
